Bob's Akumal Tostadas
(Feeds two)

Ingredients:
4 Tostada shells
1 avocado
4 fried eggs
6 oz Queso Fresco (Farmer's Cheese) crumbled
1 cup Pico de Gallo*
Fry the eggs to taste (very messy if you like yours over easy!!)
Cut avocado into small cubes (just chop it up!)
Grate the cheese
Place the shells on a plate, top with the egg.  Then add avocado and 1/4 cup of the Pico de Gallo.  Top with the grated cheese and eat -- very carefully!   Not a neat and tidy food to eat on a first date!!   Keep the paper towels handy!!


*If you're in one of those places "Without a Mexican" . . . where you can't buy it by the pound in the deli, here's an easy recipe for Pico de Gallo:  (Do NOT use the cooked, canned variety. . . not AT ALL the same!!  You can get fresh tomatoes, onion and some sort of hot pepper anywhere.  And dried cilantro comes in a spice bottle in the grocers)
  • Two medium tomatoes, chopped
  • 1/4 cup chopped white onion
  • 1 small fresh jalapeƱo or serrano chile, chopped fine
  • 1/4 cup fresh chopped cilantro  (A tablespoon if you use dried cilantro)
  • 1 tablespoon freshly squeezed lime juice
  • 1/2 teaspoon fine salt, or 1 teaspoon kosher salt
A purist will seed the tomato and keep seeds in for the chile.  I do the opposite!  When it's finished add more cilantro, salt or lime juice to taste. 

Make it first to let the flavors blend.  It will be ready to eat by the time you get the eggs fried and the tostadas assembled.
